Hi Syl,

I read that you use small amounts of coconut milk (low fat) daily, and I wondered what you use it for. Do you add this to recipes? It sounds tasty, but I've avoided coconut milk altogether out of fear!

I use small amounts to make lightly curried chicken breast and shrimp with carrots and zucchini served on rice. Also, I use it in small amounts for chicken and shrimp Thia-like curry soup. It is very versatile and small amounts add a lovely fresh flavor to many dishes.
