I get symptoms (bloating, gas, lower ab pain) consistently 3 hours after eating. this is not every day but when it starts I have it for a week or so and then it goes away for a couple of weeks. i have kept a food diary and cannot link it to any specific food group.

Welcome to the board,

The problem you describe is common for individuals with IBS. The delay is the time it takes for undigested foods to reach the colon where is it is fermented by colonic bacteria to produce gas and other by-products.

Have you read Heather's books and/or looked at the dietary information on this web site particularly the information on soluble, insoluble fiber and trigger foods? You may also find the information in the first two link in my signature useful for managing bloating, gas and pain.

Ask lots of questions. There are many knowledgeable people on the board.

Yes, i have read heather's book, given up coffee, and try to eat soluble fiber before insoluble. I thought i had been adhereing pretty well to heather's rules for IBS.

Presumably you have reduced you insoluble fiber consumption too. If you still have problems then you might read the first two links in my signature for information on a clinically tested dietary approach for managing functional GI disorder symptoms like IBS. I have using the FODMAP approach along with Heather's diet for a few years with reasonably good success. The FODMAP approach is designed specifically to reduce bloating and gas.
