Baking/Fat Problems-Please Help

I am having an awful IBS day.
I can pinpoint it to last night.
I had a hankering for dessert.

I overindulged and had a few too many (4) which is roughly 40% of the package.
Nonetheless the frustrating thing is this....I bought an expensive mix which is gluten free and supposed to be low fat.
The recipe required using 6 TBSP butter...I used smart balance light butter.

Even adding the butter...6 TBSPX5 grams per=50 grams of fat. 50 gramxX9=450.
The mix had 1500 calories by itself (with 0 grams of fat).
1500+450=1950.............450/1950=23%.
Hence...this SHOULD have been safe.

Yet almost every time I try and bake so I can enjoy cookies/muffins whatever...it backfires and I am very frustrated.
I know I am having a bad reaction because of the butter, but I can't figure out why.
When I use Smart Balance in small amounts, I am fine.
Yet even here...the total fat from calories is still under the 25% standard...so I should not be feeling miserable, as I did IMMEDIATELY after and all through today.

Do you have any idea why this is the case? It makes no sense and is really disheartening. The only thing I can think of is, butter/fat at a certain amount (3 TBSP and beyond) even if buffered and diluted to account for 25% or less of calories, is such a dense amount, it cannot be buffered into being safe.

My guess would be the quantity of what you ate.
I am assuming a serving size is one muffin and if you ate 4 then you have quadrupled the serving size!

I was able to eat dairy in small amounts...milk in coffee and tea,or some cheese in a salad, for example BUT not able to have a dish of ice cream without issues developing.

Would be interesting to know if you had a problem had you only eaten one??
