Does anyone have any trouble with the cheddar flavor veggie shreds? I was so excited that the little health food store down the road was able to order some for me. I had some with dinner on turkey tacos and a couple hours later I was really sick. I just figured something didn't agree with me. Then the next day I had a taco leftover and ate it with the veggie shreds for lunch and again a couple hours later I was really sick again. I know it's not the turkey tacos because I make those a lot and I was using a little bit of regular taco cheese and never got sick like that. I can eat the mozzarella flavored veggie shreds just fine but the cheddar flavor do not agree. Does anyone else have this trouble and is there anything else you can use to substitute cheddar cheese in a recipe? Like a macaroni cheese with a white cheese?

I had someone respond to me on the IBS recipe board and suggest that I ask the question here for a quicker response.

I did not realize that the veggie shreds or soy cheeses contained milk protein or any type of dairy. What is the difference between lactose and dairy? I LOVE cheese and have been trying to find an alternative and I finally thought I did but the cheddar isn't working out so well. Any suggestions or insight would be great. Thanks!

Lactose is a sugar found in dairy products. Some individuals have troubles digesting it. Lactose and some of the proteins in dairy products are considered to be IBS triggers on the EFI diet.

Generally speaking there is more lactose in soft cheeses than in hard cheeses.

Check the ingredients on Daiya cheese -- it's sometimes hard to find, but is really spreading. It's lactose, dairy, soy, and (I think) wheat free, and it melts well.

I found Daiya at Whole Foods. I haven't tried it yet, but, it looks good for anyone who wants to avoid dairy. Soy products are a big problem for me. I have in the past bought rice cheese but that also has some dairy in it.

Thanks everyone for the tips about this cheese. I'll have to see if the health food store in my area can order it for me. We don't have a Whole Foods around here the closest ones are either in Cleveland or Pittsburgh. It's hard for me to find the cheeses around here. Thanks again I appreciate it!
