I know people who can't eat food from the crockpot, but I'm not sure if that is a common IBS thing.

"You absolutely must eat insoluble fiber foods, and as much as safely possible, but within the IBS dietary guidelines. Treat insoluble fiber foods with suitable caution, and you'll be able to enjoy a wide variety of them, in very healthy quantities, without problem." Please eat IF foods!

I suspect there was too much insoluble fiber in the sauce particularly from the celery

I can handle small amounts of cooked tomatoes, but if I eat too much I will get gas every time.
You might try just adding ONE veg to your crockpot meal and seeing how it goes. If you do fine with cooked carrots, for example, next time try it with a bit of squash instead. Trial and error.
