I make my own frozen dinners...

seriously- hot pockets from a safe pizza dough recipe with safe fillings that are baked and then frozen (reheat in the microwave)... chicken adn rice dinners with varying veggies and sauces (mostly mushrooms and carrots, but occasionaly I put well cooked other veggies in depending on how I am doing)...

I have a lot of little things I do to make life easier as I work full time and go to school full time... but for day to day life when that isn't the case- hummus and pita is often a safe meal for me, and so is a baked potato with chicken breast- and sauce if I'm doing well enough for it.

That sounds good! I too make my own frozen meals from whole foods. I like to make safe chilli's and soups and freeze in two serving containers, so I can eat on them either two days in a row or two times in a day. It really doesn't bother me eating the same things over and over. You kind of get used to it when you have these problems!

As for the hot pockets, I will definitely have to try that!! That sounds delicious! Do you use the pizza dough recipe out of the EFI cook book?

We have this gourmet pizza place here in town called the Lost Dog. It is soooooooo good! I get them to leave the cheese off, they think it's weird, but they still do it! I get a pizza called the "Happy Hippie" its fresh cooked spinach, artichoke hearts, olives, tomatoes, and some other stuff, can't think right now. But it's safe for me, and its the best alternative to cheesy pizza. I hadn't had pizza in so long before I got them to make it for me! Now, I'm in love!!!

Do you make your own hummus, or do you get it at a market?
