Yummy Frosting and Cake!!!

Hi everyone, I just celebrated my 21st birthday with a delicious wheat/gluten/dairy free birthday cake and frosting. I made a vanilla cake mix from the Gluten Free Pantry and used Cherrybrook Kitchen Vanilla Frosting! The cake was moist, and light and the frosting was creamy, but not too sweet. It was so delicious I just wanted to share my newfound discovery with all of you.

What did you make the frosting with that it wasn't sky high in fat?

I miss frosting...

I just found this on the web. dianasdesserts.com
This looks safe and simple engouh...
Use this glaze for your cupcakes, yeasted coffee cakes, sweet rolls or drizzle over your bundt cakes.

Ingredients:
1 lb. powdered sugar or icing sugar (about 3 3/4 cups)
4 to 6 tablespoons water or milk

Instructions:
In a large mixing bowl, combine confectioners' sugar with water until mixture is desired consistency. Add more water for a thinner consistency and less for a thicker consistency.

Makes approximately 2 cups glaze.

Variations:
Lemon Flavored Glaze:
Substitute 4-6 tablespoons lemon juice for water. Add 1/2 teaspoon grated lemon rind and a drop of yellow food coloring if desired.

Orange Flavored Glaze:
Substitute 4-6 tablespoons orange juice for water. Add 1/2 teaspoon grated orange rind and a drop of orange food coloring if desired.

Coffee Flavored Glaze:
Substitute 4-6 tablespoons strong, cooled coffee for water.

Almond Flavored Glaze:
Add 1 tablespoon of almond extract and 5 tablespoons of water to 1 pound powdered sugar (approximately 3-3/4 cups).

Chocolate Flavored Glaze:
Add 1/2 cup unsweetened cocoa powder to 1 pound powdered sugar (approx. 3-3/4 cups) and 1/3 cup water. Add more water, a tablespoon at a time, until mixture is desired consistency.

Chocolate Fudge Glaze:
Add 4 ounces melted, unsweetened chocolate to 1 pound powdered sugar (approx. 3-3/4 cups) and 1/2 cup water. Add more water, a tablespoon at a time, until mixture is desired consistency.

Makes approximately 2 cups

Thanks Sheila, I've actually made that before. I miss real, honest to goodness frosting. Which you can't make without copious amounts of butter or shortening.

I've made the 7-minute egg white frosting as well, but personally I think that just tastes weird.

I miss birthday cake...

Oh Fen, I missed birthday cake too, until I used these products. The frosting is already prepared, we just let it warm up a bit and then it was spreadable. There was only 120 calories per 2 tablespoons with 50 being fat calories. And believe me, the Gluten Free Pantry cake was amazing, it was almost like Angel Food but a little denser.
