I tried to make mac and cheese using Lisamatti almond cheddar cheese, and I couldn't get enough flavor. I can't use soy cheese because I also have Interstitial Cystitis and it gives me flares. I'd even be up for something I could add to give it a more cheddary flavor. Thanks! It comes in a cannister just like Parmesan cheese. I think the brand is Red Star.
