You are an amazing bunch. Cooking two meals so you can eat safely and hubby is happy. Seems like we are also a lucky bunch that we have understanding hubbies. In fact, mine called last night and suggested we go out to dinner as he knew how burnt out I was. Trouble is he doesn't get home until after 7 and it would be almost 8 by the time we ate at a restaurant.As it is we sometimes don't eat dinner until 7:30.

With your encouragement I did make him one of his fav dinners. Grilled lamb chops, cauliflower with cheese sauce and spinach salad. He LOVED it and there is plenty for him for tonight. I think I will pick up Halibut for myself for tonight. It is the wild caught and is on sale at sprouts. a mini semi healthy store. We don't have Whole Foods or any really good markets where I live. We do have a Trader Joe though.

On to the turkey. I know Heather recommends white meat chicken and turkey. Do you gals use ground white meat turkey or just plain ground turkey? Spaghetti and meatballs sounds so good. I made some for my daughter and her kids and she said it came out amazing. She wanted it made with beef. Again, thanks for all the suggestions.

I understand too. My hubby has been very supportive for the past 3 years of my IBS change. I don't usually make two meals for him and I. I use ground turkey for meatloaf, chili, spaghetti, egg rolls and other ground meat recipes. I make two small lasagna's one from here for me and the other for him and the kids. It is the same amount of work. Every once in a while I will eat a 1/2 of a very lean pork chop while making them for him. If we have ham. I buy regular ham slices for him and I take a turkey ham cut it into slices and freeze them individually. There is a really good and safe recipe on here for scalloped potaotes that I also make. Hubby loves it. On pizza nights he makes his frozen pizza and I make an Amy's soy cheese one or if we order out I get a cheese less one from our local pizzeria. As far a hamburgers and hot dogs. I buy Ball Park turkey dogs and regular ones for him, and frozen hamburgers and Jenni O frozen turkey burgers. Plus Alexia or Cascade Farms makes great low fat frozen fries. I don't have the luxury of making alot of homemade things because I work full time and have two little ones. But I do alot of improvising to help me through. Hope that helps you a bit!!

I second a lot of the suggestions already given: try ground turkey (I use breast or all white meat) to make hamburgers (Kree's Peking burgers are fabulous), meatloaf (Shell's meatloaf recipe is yummy), spaghetti sauce, chili, Maid-Rites, sloppy joes (Yoda's recipe is wonderful), and so on. Do try different types of seafood - there are a number of shrimp recipes, including a bunch of different scampi ones (I like mine best but I think they're all pretty darn good). Also, try scallops or mussels (I posted a Rachel Ray mussel recipe that's wonderful). Some types of fish - like swordfish - are not as fish-like as, say, salmon so maybe you can sneak some of that in.

Also, don't forget about frozen entrees and meals for your husband. They're often high in fat so they may not make good everyday choices but they could be just the thing when he can't stand another piece of fish or chicken. Stouffer's makes good lasagna, stuffed peppers, and spinach souffle; Marie Callender makes some full meals; and there's always frozen pizza. That way you're only really "cooking" one dinner - yours.

I don't always eat the same thing as my family. If I'm tired and we pick up fast food, I make oatmeal. Not exciting but safe.

If you have Costco, they have turkey burgers in a big stack like hamburgers. I make them on my George Forman grill. My kids and dh love them too! We actually eat very little red meat here and it's been that way since before I ever had IBS.

Thank you all so very much. I finally figured out how to use the recipe exchange index (duh) and I am so jazzed now. So many new things to try. I will make DH a couple special meat dishes that can freeze well in portions, but I am going to try a lot of ground turkey or chicken breast recipes for stuffed peppers and meatballs and stuff. those Peking chicken burgers sound delish. DH loves shrimp and scallops and I can get pretty good frozen ones at Trader Joe. Plus I do buy him bologna (yuk - but it's Boars Head so I don't feel like I am killing him) and hot dogs which he loves (again Boar's Head). I guess I had just hit the stress wall. I've managed to recovery this weekend and will be going back to my daughter's tomorrow. She is doing better (3 weeks post surgery) and I think after this week she won't need so much help. She has great markets near her - Gelson's and Whole Foods. Where I live we don't have all that good stuff, so maybe I can get fresh mussels and try one of Sand's recommendations.

So, once again, thank you, thank you, thank you!

I'm so glad you're jazzed about recipes again - it seems to go in cycles for me. And I'm really glad your daughter is doing better.

I hope you enjoy the mussels. (I actually bought mine at Shop-Rite which is about the furthest thing from a "health" grocery store I can imagine.)

I'm glad you're doing better and your DH is happier eating!! I remember when Thomas and I first started living together - I forgot he ate "meat". So the first 6 or 7 months all we had was chicken and fish! One day he asked to go grocery shopping with me - to buy meat! I felt so bad - here's this heavy equipment operator of mine sustaining himself on chicken and veggies! Not that it wasn't good for him, but he needed more sustanence.
