Is it ok to eat just the big part not the fleshy fatty bit or do I need to have a complete substitute? I am in Australia and there doesn't seem to be anything really. It's not quite the same, but it's not bad. I confess that I still eat bacon, too. Pork in general does not tend to be a trigger for me personally.
