Hey there, just wanted to say i tried out your meal of veges, buckwheat noodles, ginger, garlic and tamari sauce last night. It was amazing! And my stomach loved it- no discomfort afterwards which is rare for me. So thank you

I tried it to without the garlic and it was yummy. I also added alittle mirin and I used wheat free tamari sauce. But I like the soba noodles Thanks for your ideas and tips. I have been following them and feeling better. Do you roast your seeds and nuts? and if so how do you do that?

Glad you two liked it. I've been eating lots of soba noodles, so tasty. I think Heather has a recipe using soba noodles in one of the newsletters.

Nuts and seeds I eat raw. I just get them from the bulk bins. They usually have roasted ones too but I haven't tried them. The raw ones tend to be cheaper so I buy those. And well, I'm too lazy to roast them.

I do roast chestnuts and I don't think they're meant to be eaten raw. Just cut a little slit in them so they don't explode and lay them on a cookie sheet and bake at 350F for 30 mins. I found some roasted chestnuts at the store though so I bought those for simplicity

Hi jordy. I have no idea if they are the same things. Re the recipe- there wasn't one in parricular. I just stir-fried some freshly grated ginger and crushed garlic in a little oil then add some vegetables. cooked them for a bit before adding as much tamari sauce as i fancied. then added the cooked buckwheat noodles and voila! Yum!

Yep soba noodles are buckwheat noodles. However some soba noodles contain some wheat, some buckwheat. I get the 100% buckwheat ones and they taste great.

For the recipe, I usually do a stirfry with veggies and maybe chicken (or fish on the side) in a homemade teriyaki sauce. Mushrooms, zucchini, carrots and peppers go great with it. The sauce can be found in Heather's EFI book with the Wok-Steamed Teriyaki Salmon.

My slight variation on it:
1/4 cup tamari sauce
3-5 tbsp white vinegar (depends how vinergary you like it)
2 tbsp honey
2 cloves garlic or about 1 tbsp crushed garlic
1 inch ginger grated

Thank you. I'm afraid of peppers, so I'll have to avoid those. You just stirfry the noodles with the other stuff once the chicken and veggies are done, right?

Have you ever used Braggs? web page It's a wheat free soy substitute. Doesn't tamara sauce have wheat in it?

I cook the noodles in a pot of water just like pasta noodles. Strain them and put them on a plate or bowl, and dump the stir fry on them.

The tamari sauce I buy is wheat free. I haven't found any others available at my health food store. I haven't seen Braggs either here.
