Going to Camp...

I have been following this IBS diet for almost a year now. It has helped tremendously. But, this Friday (late notice, I know. I've JUST had time to think about it now after my final exams) I will leave the comfort of my own kitchen and travel to camp. I am a counselor at Girls State (not sure if anyone knows what that is) and we eat in a cafeteria while there for the 10 days. I am now starting to panic. What can I eat? I won't have a kitchen... and I'm not sure how willing the cafeteria staff will be in cooking food that I bring for me. HELP! I am at a loss for what to do. Any suggestions? Anyone?

I'm sure the kitchen staff will help you. After all, they've certainly had to accommodate an allergy or two in their time. Just tell them you have allergies and ask for their help.

You can take all kinds of non-perishable things with you. Whenever I take long trips, I take a cooler and my own foods. Things like grits or oatmeal, all you need is hot water. Rice cakes, crackers, dried fruit. I've even packed up my toaster and microwave when I've had access to a plug. You'll be okay. You just have to get a little creative.

The staff will help you, if possible call ahead of time. I would also pack instant oatmeal (not the best but I remeber Heather mentioned that it was okay when travelling). Also pack safe foods such as rice crakers, cereal, applesauce also bread and use the toaster (if avaliable).
Go through Heather's diet and pick out safe foods that you can store in with you. Also make some bread that could last a few days to start.
Hope this helps.
