hwo to get enough vitamins and minerals etc when you eat all bland

I know I can take a vitamin, but I can't do the iron it makes me sick...any suggestions

Well, a couple thoughts...
"Bland" should also include vegetables and fruits. There are quite a few that are still very safe, if you haven't gotten to a point of really adding a bunch of IF foods back in yet. Refer to the soluble fiber foods list and eat as many of the non-bread/pasta sources as you can manage. Be sure that you're also eating some low-fat protein, such as white fish or chicken breast.
Definitely, though, think in terms of adding insoluble fiber foods back in gradually. You shouldn't be eating all SF for more than a week or two at the very most.
In terms of vitamins, there are some out there that contain little or no iron. You'll laugh, but when I was stabilizing, I used Flintstones Chewables - yep, kids' vitamins. They're better than nothing, and I found them pretty easy on the stomach. One vitamin a day is a dose, even for an adult.
