Won't eating lots of white bread (French and sour dough) and water produce bloating?

It does for me. I think because it constipates me, causing the bloat to become more intense.

I try to get SF from other sources.

Eating to much white bread and pasta does for me too if I am not getting the right amount of fiber.

Maybe for some, but the idea of eating foods like that is that it is easy to digest and calming to the GI tract. Bloating can be caused by bad bacteria and certain foods but is most often caused by the gut basically working itself into a tizzy. It gets screwed up and this results in bloating. Bloating is much less often caused by actual digesting of certain foods than by the tract's poor movement of matter and gas; the gas getting formed into large masses instead of the usual intermittent amounts like in normal people. Eating easy to digest foods in small amounts, with adequate water/tea, exercise and a heating pad is what helps bloating.
