ways to "sneak" fiber into food

One of my sons is on the C side (like his mom) and now he and his brother will be taking some new medication...possibly long-term (for a different condition) and one of the possible side effects is C. So, without drastically changing his diet because that will only cause him to rebel, does anyone have any great ideas how to sneak fiber into his diet? He's almost 8.

Do your kids like berries? I'm thinking along the lines of berry-based desserts, smoothies/sundaes, muffins,etc.
Maybe try more stir-fries? Hide shredded/grated veggies in quick-breads and meatloaf/burgers?

SFS in juice or milk over cereal or pretty much anything you can drink (though he'll notice it in water). Mix in brown rice when you cook white rice. Leave skins on potatoes for mashed potatoes, fries, etc. Add extra SFS when baking and cooking. I do all of these for myself, though, too!
