Mashed Potatoes & Red Pepper Hummus

I wasn't sure where to post this, here or the Recipe board. It's gonna sound really strange, but it was SO good! I was tired of plain mashed potatoes, I wanted something tomato-ey, like french fries & ketchup. All I had on hand was roasted red pepper hummus. So I stirred a little bit into the potatoes & it was amazing! It gave it just enough tang. Just wanted to share, in case anyone else gets bored w/plain ol' potatoes.

It wasn't really a recipe. It was just mashed potatoes that I had already made (w/soy milk & margarine) & I put a couple spoonfuls of the hummus in it. I think I'll have some for lunch tomorrow too!

Where did you get the red pepper humus, store or home made? I used to eat a roasted red pepper dip (bought from store) and it was sooo tasty but very fattening and had milk in it. I'd love a replacement.

Some of the Trader Joe's hummus is really good, and it isn't too fatty and doesn't have any additives. The Red Pepper and the Garlic Hummus I think are the best (and they have different versions, like low-fat)! I definitely recommend them.

I bought Athenos brand, but only the Roasted Red Pepper flavor is IBS-safe, the rest have HFCS. It is kind of high in fat though, 3g fat, 50 calories per serving (2tb), so it's 54 calories from fat if my math is right. Here's the ingredient list:

chickpeas, red bells peppers, water, olive oil, tahini, salt, lemon juice concentrate, spice, sorbic acid, sodium benzoate, natural flavor, vinegar, phosphoric acid.
