Hi! Has anyone experimented with miso? I got some white miso at the Health Food Store last night and was wondering if anyone had some good recipes...? I also wanted to make sure this was a safe food...? Thanks!

Miso is basically just fermented soybeans. Some varieties have rice, barley or other grains added. IMO, even the light miso has an unappetizing fermented smell to it... but I would not think it would aggravate IBS.

Miso is really nice as a fish marinade - you thin it out with mirin and cover a fish filet, then scrape it off and grill or bake the fish. It's particularly tasty on salmon or sable (a.k.a. black cod).
Heather has a recipe for roasted miso salmon in IBS: The First Year. You can also find a bunch of recipes if you Google for miso salmon recipe.

I love miso! I don't exactly have any recipes, but do a search and tons of inspiration will appear. I think my favourite use of miso is in sauces/dressings/dips and vegan gravy. Try incorporating it into a gravy and you'll be amazed at the richness and depth--especially if you add mushrooms! I like to add miso to stews for that depth of flavour--I think it's called "umami." Adding it to cooked grains, i.e. rice, quinoa really is a flavour booster.
