Can dietary enzymes be taken with IBS ? If so,with food or on an empty stomach? Or will this be a trigger and cause an attack?

digestive enzymes are fantastic for ibs, take right before you eat and do a search on the boards if you want, these have come up lots of times.

I take Digest Gold, by Enzymedica (it's expensive, though), and have found them particularly helpful to take before restaurant meals. Especially when I'm eating somewhere new or trying a new dish.

...or do digestive enzymes and probiotics just not make a difference with some people? I don't get how they can be so very helpful to some...and not seem to help for others to any great degree. Or would I be even worse if I didn't take them? I'm too chicken to try going without, though. But could I just be wasting money?

Do they help everyone to some degree?

You need to give it time. Most people don's start to see results with the probiotics for at least 8-12 weeks of continuously taking it.

But, I've been taking these supplements for over 2 years. The lady in the HFS introduced me to them.

What probiotic are you using?

I asked someone at the HFS for a probiotic and took it for nearly 3 months this summer and didn't notice anything. Just last week I started taking BIO-K+ and already I can tell it's doing something. I'm not sure if it will be a positive change yet, as my stomach just feels different and rumbly (which they say is normal when starting a probiotic). I decided on this one based on someone on this board who is currently taking it. I find the HFS people helpful sometimes, but sometimes they're just going on 'what they're told' and not 'what they have had success with'.

I'll let you know how I do with this BIO-K+ refrigerated soy yogurt, and if you're interested, the one I tried that didn't work was BIO-K+ non-refrigerated capsules.

Maybe you should try a different brand/kind of probiotic. My experience was similar to Kat's. I took Country Life's Powerdophilus for a couple months with no noticeable improvement. Then my Mom suggested I try Primal Defense, and it made a big difference for me.
The same thing probably goes for the enzymes, but I haven't had a lot of experience with them yet.
