I notticed that beets are listed as a SF vegetable. I take it to understand that that means the Root part of the beet (like carrot and pottato). like carrots does it have to cooked to be counted as SF? or is Straight fine.
thx

100 grams of beetroot contains 2.5 grams of fibre of which 1.2 grams is IF and 1.3 grams is SF.

I boil the roots until tender. I remove the tops but I don't remove the skins or cut the tails of the roots until cooked. When cooked I rinse them in cold water. I squeeze the roots between my fingers to remove the skins and then tail. Watch out they can be pop out of your hand

Serve cold or hot. I like to sprinkle mine with salt, pepper and pickling vinegar.

I use to eat the tops too. I prepared them like cooked spinach. I believe there is more IF in the tops than the roots so I tend to stay away from them these days.

They are outstanding roasted. Heather has a great minted beet salad recipe in the archive. I roasted a bunch the other night & they were like candy! If you're feeling warped, try blending beet with potato.

Of course, steamed/boiled is okay...the flavours of the beet carmelize in the oven, though! They are easier to peel after cooking, too.

i ussually buy it sliced and peeled from a tin. Are they boiled already when they're done like this, or do they still need to be cooked?

Beets are fine from a can. I eat them with no problem.

mmmm I love beets for IBS, think of beets like carrots, since they're so close. the root part is the SF (the stalks are almost pure IF, just like any other greens). like carrots, you'll want to eat them cooked to be safest, but any way you cook 'em is fine (and if they're canned, they're already cooked). pickled is usually ok for me too.

I've actually never heard of eating beets raw, I'm not sure what that would taste like but maybe it's good?
