I buy 3 bulk bags at a time and have just kept them in my pantry. I don't recall if it has an expiration date, which I'm pretty paranoid about. I'm away from home so I can't check. Mine keep fine on the shelf for 3 months or longer sometimes. Living on a river I have to deal with moisture ruining my food but the last bag I open is as fresh as the first bag. These puppies are sealed great. Sorry I can't answer your question about freezing.
