I obtained the IBS recipe book and it has many good ideas. HOwever, it relies very heavily on white flour items. All backed products use white flour, the french bread is made from white flour. I have a mild blood sugar problem and need to eat products with a low glycemic index. anyone have any thoughts on this? andrew c

Hi Andrew,

I think you'll find that Heather's recipes are all using white flour because white flour is higher in soluble fibre, and so safer for IBS.

If you look at the list of soluble foods on Heather's website (Eating for IBS), you'll see that white bread and french bread are on this list.

What about millet, buckwheat, and soy flour? Would these be useful? You could make unyeasted flat breads perhaps?

You need to incorporate low glycemic soluble fibre foods into your diet.

There are many options of high SF sources that are low glycemic--explore !

Quinoa is an excellent low glycemic SF grain. Sweet potatoes are low glycemic, too. Many fruits and vegetables are low glycemic and great sources of SF--check the list for ideas. Also the fiber will reduce the impact of the carbs. Combining safe protein sources should also keep your blood sugar steady. Can you tolerate oatmeal? If you can, it's very low glycemic too.
