Hi,
I've started using miso after leaving it out for years, and think it may be irritating my stomach, even though it has a reputation for being good on weak digestive systems.
Miso is fermented soya bean and grain ~ I've got hatcho miso at the moment. It's high in seasalt.
It's said to be rich in enzymes and vitamins.
Any comments appreciated and thanks!

I prefer the mild white or yellow misos. However, too much miso will give me HUGE migraines--too much soy, in general does that too me. I find fermented soy foods much easier to tolerate/digest than unfermented soy foods for some strange reason.
Miso is great as a soup or for sauces/dressings and adds flavour without fat. I love making a miso-mushroom sauce or gravy.

I've had no problem with Miso soup or even mixing it into rice etc. No problems at all with Miso soup in restaurants, or even pre packaged, but as was said above we're all different.
Wind, do you have a yummy receipie for making a your miso-mushroom sauce or gravy?
