So, i know that a lot of recipes substitute meat with tofu. But I'm a little confused. What exactly IS tofu? Can someone help me out here?

I am not sure what is used most commonly since there are several ones that couldbe used, but a coagulant is a thickening agent used to make the soymilk curdle so it can be pressed into blocks.
