Got my EFI book

Finally got around to ordering the book, mostly to get more recipe ideas. My mom lately has been super helpful in dealing with my new diet. She's got high cholesterol and is trying to lose a bit of weight. Seems like we can eat everything the same and it's working for both of us. We've both gone nuts on getting soy replacements for everything, and have just simply cut beef out of our family diet.
Well she's already reading the book which I'm glad for, finally it'll explain to her the reasons 'why' I can't eat salad on an empty stomach, and why low-fat milk is still no good. I told her that if she ever wants to make anything, feel free to pick anything from my book.
Next week I have a bit of a break in my studying, so I'm planning on making 1 recipe from each section (beverage, appetizer, soup, meal, desert). Anyone got a good suggestion of which I should do? There's so many to choose from! Thanks, Kat

Well, I haven't used a lot of the recipes in EFI, but I HAVE used the cornbread recipe multiple times. It's really yummy. However, I bake it in an 8x8 pan instead of a loaf pan. I just bake it at the temp and time recommended on the recipe that's on the cornmeal cannister.
Oh, and the blueberry oatmeal recipe is also good.

I really like the smoked whitefish dip. The pecan sweet potato pie is also good, but a bit time-consuming and you need to get the revised baking time from this site if you don't want pecan sweet potato soup.
