Question about Parsnips

I was watching Emeril the other day. He said parsnips are a cross between carrot and a potato. Is this safe?

I'm new to this but aren't carrots and potatoes both on the soluble fiber food list?

Yes they are but I have a very sensitive tummy. He said it tastes like a cross between...not sure if it exactly like or not?

They're a root veg., and SF, and safe.
I just think they're gross.

Parsnips are nothing like a potato. It's a carrot with a kick! I love them. One way I like to prepare them is to cut them into french-fry sized sticks, brush them with olive oil, sprinkle with salt, and then oven roast for 20 minutes or so in a medium oven (350). Turn once during cooking.
They also make an excellent puree. Boil them until tender and then send them through a food mill, then mix with some bouillon and seasonings. You may even want to experiment with fake cheese.
Trust Emeril on this. The best chefs know how to do well by a parsnip.

Actually, I'll bet that you're right about parsnips. I recall formerly LOVING root chips and the parsnips rocked in that snack. I'm not sure how safe they are--it's been so long since I've even considered them.
You know...I just might give those parsnips a chance again!

I don't mind them, but I can't remember the last time I bought any.
But somewhere, in the depths of my files, I have a recipe for candied parsnips. I've made it a time or two. They're...different. If I come across it anytime soon, I'll post it on the recipe board.
