I'm supposed to bring something................I want to bring something tasty for everyone, yet IBS friendly. I know they are going to have potato salad, meat and dessert, all things which will cause my stomach to go into a tailspin.....

How about a pasta salad? There are some good recipes here. Or you can make your own dressing with some LF or FF mayonaise or Miracle Whip and some sour cream alternative (Galaxy or Tofutti) and your favorite seasonings.

Hrm. What about a rice salad of some sort or a bag of baked chips?
Could you bring your own meat? I did that at least once this summer.

if I can't get out of food-oriented events, I always just eat beforehand and then bring a safe dessert that I can pick at while everyone else is eating.
Rice Krispie Treats are good -- they're easy and everyone likes them. The last time I brought them as the one safe food, I only got one small piece because everyone ate them too quickly. You can use the RKT recipe on the cereal box or marshmallow package, but only use 2 T IBS-safe margarine or oil (usually it calls for 1/4-1/2 C, which is way too much).
If it's family or people I know well, I will also bring my own chicken breast and grill it with just cooking spray. Sometimes also I'll ask them to bake a potato for me in the microwave.
If I am stuck there for the whole day, I bring my safe dessert AND chicken AND a batch of bready stuff like bread or muffins. I don't do this unless I know the people well enough, though, 'cause it looks kind of weird to be juggling an armful of food!
Not sure if you're C or D, but make sure to make your meds beforehand. Just in case you do happen to slip a little.
