white vs not white.... new

Hi Beth and Amy,

I used to eat spelt bread with whole flax seed cooked in it every morning before I became stable. I prefer the dark spelt flavor and texture. I tried making the bread with the white spelt and it just wasn't "right".

I can only find the dark kind and I would like to eat the first half of my sandwich with white and the second half dark just to be safe.

I found the white spelt at Whole Food is the bulk section. I would recommend bringing your own ziploc bags as their bags are flimsy and transferring the flour from their bag to whatever you store your flour in is messy.

I guess you can tell I am somewhat anal about silly things! No pun itended on the "anal"!

The white flour is about twice as much as the regular and I really don't care for it. The texture of my bread was gummy.
