It's mainly chicken stock and arborio rice. Most recipe's I've found only call for about a tablespoon of olive oil. What do you think?

if you make it yourself then sounds safe! but be verrrrry careful in a restaurant...risotto is traditionally made with a lot of cream :-(

The oil is not really necessary. It's a trigger for me.

just so you could an idea on how broad ibs is (so to experiment with our risotto till you find the right balance for you) - I can take A LOT of oil (I happen to dunk my bread into lots of olive oil often) - and some people can hardly take it...so experiment and see!

Risotto is great, and if you check the recipe index there are quite a few safe risotto recipes.
Dalia is right though, restaurant ones often have cream or parmesan cheese, both of which are BAD.
I am pretty good with tolerating oil too, but some people can't handle any so be careful.

I'm like Wind, I can't handle more than a few drops of it. But I do pretty well with vegetables, whereas others don't.

and 1 tablespoon oil in a pot of risotto would be ok but remember it all depends how big the "pot" is. When I make risotto it is usually about 8 servings. If I used 1T oil amongst 8 servings that would be nothing!
