Pretty new to the diet and wanted to know if plain rice is the only way to eat it. Boxed rices are probably out since you usually have to add butter but any recommendations of something to add to plain rice so I could make and bring to work?

I like to cook a big pot of rice, keep it in the frige, then nuke small helpings with chicken broth, a little sesame oil for flavor, and some nuts &/or raisins. Almost becomes a pilaf-y kind of thing. Very tasty.

Actually, with the boxed rices, as long as there's no butter, cheese, or dairy in the mix itself, they're safe - just leave out the butter. I've made them that way for years. Just be sure to read those ingredient labels carefully!

My favorite rice recipe involves non dairy butter, mushrooms, and chicken broth. I sautee the mushrooms in a tiny bit of non-dairy butter. Meanwhile, I put the rice and a can of chicken broth in the sauce pan and add a tiny bit of water and the mushrooms. After that, I make the rice as I normally would regular rice.

My absolute favorite way to eat rice:
Cook in a bowl (covered) in the microwave...I have one from pampered chef that is just right! Do not add anything but water. After it sits for a few minutes (so it is no longer liquidy like you normally would do), I take and put it in a bowl with soy milk, some sugar and cinnamon. It is a yummy dessert like dish (my MIL used to eat this as her meal growing up, and I confess I now start to crave it!
Enjoy!

Aloha - noticed you were in Hawaii - we will be returning there August 1 - can't wait - miss the Aloha spirit SO much. My youngest daughter was born there in 99. I eat my rice sometimes with a little shoyu/soy sauce (as long as no MSG) and chicken.

You are in the mecca for good rice! The rice they serve at the restaurant "Zippy's" is perfect as well as "musubi" that you can find just about anywhere. Are you a "local girl" or a transplant? Ask any of the locals about musubi and they will direct you. You can also make your own with Japanse rice. It is called "CALROSE RICE"...brands like "botan" and "nishiki" are good.
