Oatmeal cookie experiment

Hey, had to share this. I'm always trying to sneak veggies into my kids - the boys are 4 and almost 3, and none too excited about eating vegetable as they used to be as toddlers. So anyhow, I'm always experimenting - last night I made oatmeal cookies according to the recipe on the quick oats canister, but got the bright idea that instead of the 1 cup of shortening it called for (yuck) I put 1 cup of canned pumpkin! Do you know they taste REALLY good? The only trouble baking them is that they don't "spread" like a normal cookie would, so you have to not just drop the dough in balls on the sheet, but spread them thin like you want them to end up. Anyway, the boys are eating them and it occurred to me that these are really IBS friendly, not a bit of fat added, only it's probably better for us IBS-C'ers as pumpkin has a good bit of fiber as do the oats. Thought I'd share! If you're interested I posted the full recipe on the recipe exchange board.

They are a little "orangey" but the brown sugar still gives them the brown color.

Welcome to the boards! One suggestion on your post above, do you eat several small meals a day? There is a lot of evidence that eating a SMALL meal every 3 hours is not only bettter for digestion, but revs up your metabolism so that you actually burn more of what you eat, have more energy, and in turn burn more fat. Just a suggestion!

Michelle, thanks so much for your response and by the way, I live in North Carolina also and tried to send a personal e-mail to you. I don't eat several meals a day only because I don't have time or maybe I don't take the time. I get up eat breakfast, drink tea, drink more tea, drink water and eat lunch. I tend to get hungry again around 4 PM so I eat a snack (normally a few crackers or an apple. I eat dinner around 7:30 PM because I am usually on the go or outside trying to get some things planted. Then before bed I eat a snack which I have always done. Like I mentioned on the earlier post, I don't eat candy or junk and I am sensitive to salt so if I do eat pretzels I do the unsalted variety. A few years ago I did graze all day on rye crackers and such but I am at a loss with what to graze on now. To me the easy snack food which we can have seems so unhealthy. It is very frustrating to watch people (like my husband) eat burgers, rice & gravy, icecream, hershey's kisses, etc. and remain the exact same weight. My weight gain is in the hips, thighs and buttocks - quite frustrating.
