I haven't tried it yet, but how about this one from Recipezaar? It's actually pretty IBS-safe already, if you substitute turkey for the beef. I also found this recipe on a different site - it sounds a little more like what we called goulash (except that we never put potatoes in it, we had it with pasta), and again, I'd do turkey for the beef, and maybe chicken for the pork.
