That I'm not sure of, because I can eat egg whites fine, and I've never used the egg white sub. Hopefully one of our local vegans can help you out with that one.

Yep I always want my husband to eat them and he says "what are they?" and I say "whites with junk in them to look like whole eggs" and he for some reason turns them down.
But no they don't whip like whites. Whipping whites is a big mystery anyway since the littlest thing will make them not whip up.
I've used powdered egg whites before for frosting flowers and stuff but they are eggs just dehydrated but you never know maybe they would be tolerable.
