Peppermint Stick Meringues

1 cup sugar 1 tbsp cornstarch 3 egg whites, room temp 1/8 tsp salt 1 tsp vanilla 1 cup crushed peppermint sticks
Preheat oven to 200. Coat 2 large baking sheets with spray, (use sheets with no sides) Dust with flour, shake off excess. In a small bowl, combine the sugar and the cornstarch set aside. Place the egg whites and salt in large bowl, beat with electric mixer till soft peaks form. Beat in vanilla. Beat in sugar mixture, 1 tbsp at a time, until the whites are stiffbut not dry. Fold in the peppermint. Drop by rounded tsp on sheets. Place in oven on two shelves. Bake for 2 1/2 hrs or until the meringues are dry. Turn oven off and leave meringues in oven for serveral hours or overnight. Store in airtight container.
*Proper meringue has a crisp outside and inside that literally melts in your mouth. The key ingredient is patience.Bake them at a very low temp, and use sheets with no sides. For best results bake them on a dry day.

Oooh, this sounds amazing! I looove meringues. It's a childhood favourite, but I used to make them with chocolate chips, and I felt kinda gloomy thinking about them without the chips. But peppermint sticks might just do the trick! Thank you. (beaming)

Ive not tried this one yet but your right sounds good. oh btw for the low fat or fat free crescent rolls it may be hard to find them in Canada (I am Canadian just moved to NC) and us Canadians do not always get what we have here in the US, try Pillsbury though and ask your grocer. I'd try safeway or IGA

How right you are! There always seems to be so much more variety and availablitily in the US than Canada, for so many products. But eventually a fair amount of stuff comes over here.
I have been looking at Pillsbury, in every grocery store I go into...nothing but the regular rolls. Ah, and I used to love Pillsbury! Didn't buy it often, but it was such a soothing treat.

Whole Foods Grocery stores have boxes of meringues cookies, plain and choc. chip. They are very good.
