This a great soup that I like to make (BTW, I'm no good with measurements as I tend to chuck everything in, so use your judgement for quantities!)
Chicken broth(store bought powder or I use homemade with the fat skimmed off) Very finely sliced greens or white part of leeks Fine rice noodles Cannellini beans(not sure if you call them this in the US) Salt and pepper
The beans are a bit bigger than haricot beans, creamy-coloured. You could also use butter beans which I think you call Lima beans in the US. If you can't tolerate them, mash them up a bit, but I find if I use the canned ones then simmer them well in the broth, the skins have softened. Again, use whichever greens you can tolerate best.
Basically, just simmer everything together - add the noodles about half an hour after the other ingrediants, as they cook quickly.
