Turkey Vegetable "Meat" Loaves

This is not only an excellent recipe, but it's also a good way to safely get your veggies. Note: See serving suggestion below.
TURKEY VEGETABLE LOAVES
2 lb. ground turkey (as lean as you can buy it)
1-1/2 cups bread crumbs
1/2 cup Egg Beaters
1 medium onion, finely chopped
1 green bell pepper, diced
1-1/2 cups chopped celery
One 16-ounce can diced tomatoes, drained
1/2 cup minced fresh parsley
3/4 cup ketchup
1 tablespoon Worcerstershire sauce
1 teaspoon poultry seasoning
1 teaspoon salt
1/2 teaspoon pepper
Preheat oven to 375 degrees. Spray two loaf pans with Pam. Combine all ingredients; shape into 2 loaves in prepared pans and bake for 1 hr.
Piquant Sauce
6 tablespoons brown sugar
1/2 cup catsup
1/2 teaspoon nutmeg
2 teaspoons dry mustard
Combine all ingredients. Remove meatloaves from oven and pour off any liquid. Spread Piquant Sauce over loaves and bake an additional 15 minutes.
Allow meatloaves to "set" for 10 minutes before serving.
Serving suggestion: I cut up some red "new" potatoes, sprinkled them with a little olive oil, salt and pepper and popped them in the oven with the meat loaf for the last half hour. They were a perfect accompaniment to the meat loaf.

Well, do you like leeks? I'd substitute them, but if you don't like leeks, I'd just leave out the celery all together. You could try spinach, but the taste would really change.
Just leave out the celery, Shell. It'll still be good. I had it for dinner tonight; hubby said it was his fave of all the meatloaves I've made. (I like meatloaf.)

If you make it, don't forget the PIQUANT SAUCE: Combine 6 tablespoons brown sugar, 1/2 cup catsup, 1/2 teaspoon nutmeg, and 2 teaspoons dry mustard. Spoon it over top, and bake another 15 minutes. It really makes it!
And in case anyone's wondered about substituting vegetables and things like that... I can't eat peppers, and I've been having an "off" week, so I was kind of afraid to eat tomatoes, so I omitted both and added about a cup of finely chopped mushrooms instead. Mind you, this DOES alter the flavor significantly, but it was still REALLY tasty. Don't be afraid to experiment, but if you try a veggie with a high water content, you might want to saute it a little first or keep the quantity low, so you don't end up with meatloaf soup!

Shell, I haven't been following your diet thread. It's called denial. I have to lose weight, and I just don't know how.
What are you doing to lose? Counting calories? Really? You count everything you put in your mouth? -- Groan -- But it's working for you, I know, because I occasionally glance at that thread and see when you lose more. Then I quickly look away so I don't have to face the music myself.
See how I am?
But as bad as I am, if I had to figure out how many calories were in one slice of meatloaf, I'd just pass on the damn meatloaf and chomp down a few saltines instead! I mean, how can you enjoy your food?
I'm having a bad day. The doc called with my lab results, and they weren't good. He wants me on a cholesterol-reducing drug, and I refuse.
Okay, sorry, ranting over.
It's time for me to go out in the garden and eat those worms. No calories there!

Here ya go for those of you counting calories out there. I forgot to figure out the fat...sorry.
WHOLE recipe ( if you use ground turkey breast ) 1,579 calories. That equals 789.50 per pan (it makes 2)...then just divide 789.50 by however many slices you cut it into. (i.e. 6 slices = 131.58 per slice
WHOLE recipe ( if you use ground lean turkey ) 1,739 calories. That equals 869.50 per pan (it makes 2)...then just divide 869.50 by however many slices you cut it into. (i.e. 6 slices = 144.92 per slice
