I spotted this recipe just now on epicurious... if you search for "ice pop" or "popsicle", you'll turn up a lot more recipes, too. I suppose the rum is kind of iffy for a lot of people, but you could leave out the alcohol if it worries you (sub. water instead).
3 cups chopped peeled mangoes (2) 6 tablespoons light rum 1/2 cup superfine granulated sugar 2 tablespoons water 1 1/2 tablespoons fresh lime juice
Special equipment: 8 (1/3-cup) ice pop molds and 8 wooden sticks
Blend all ingredients in a blender until smooth, then force through a fine sieve into a large glass measuring cup. Pour into molds and add sticks. Freeze at least 24 hours.

I have SOOOOO gotta make this! But I don't wanna make pops. Instead of pouring into popsicle molds, why not pour into freezer containers and then scoop out into martini glasses "as needed"? If I added more rum, wouldn't the rum keep it from freezing completely, so that you'd end up with more of a slush? Ooooooh.......

I would probably suggest subbing in fruit juice instead of water....maybe orange or rasberry
hmmm....I might just try that too...hehehe

Another option too, of course... although it depends on your tolerance for fruit juice. A lot of us can't have it. But if you can, definitely give it a try!
