Thanks Heather for the suggestions earlier. The bread turned out great and very moist.
ZUCCHINI BREAD
2 1/3 C shredded raw zucchini
6 egg whites
1 3/4 C Sugar (I add less)
1/3 C oil
1/3 C applesauce
1 tsp vanilla extract
2 cups white flour
1/4 tsp baking powder
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
1 C chopped walnuts (optional)
Beat eggs, sugar, oil, applesauce and vanilla extract together. Add flour, baking powder, baking soda, cinnamon, salt and walnuts. Mix together by hand. Add zucchini. Mix well. Pour in 2 small greased and floured loaf pans or 1 large loaf pan. Bake 1 hour at 350 degrees.

I'm trying to find things that are both ok for IBS and for MY DIET So... if anyone is interested (Kandee) here is the scoop on this one.
INCLUDING THE TWO CUPS OF FLOUR THAT WAS LEFT OUT OF THE "ORIGINAL POST" oops If you don't include the walnuts the whole recipe is 2431 calories. Now depending on if you use 2 small pans (16 servings) or one large one (8 servings) the calories per slice would be..... either 152 or 304 per slice. If you do include the walnuts the whole recipe is 2971 calories. Now depending on if you use 2 small pans (16 servings) or one large one (8 servings) the calories per slice would be..... either 186 or 371 per slice. Hope this can help someone besides just me Thanks Barb for the recipe....I may make it in a few weeks.

Anyone know what the WW points for this would be? I have no idea how many calories are in things, but I understand my points!

I've found that if you bake a "loaf" quick bread in a cake pan instead you don't have any fall to it. (GF breads are notorious for this)...plus it is easier to divide and wrap for freezing or for a take along snack.
A recipe that makes a double loaf bakes up fine, GF style, in a 9 X 13 inch pan.
Kandee Shell, I couldn't make this up and diet too..........I'd eat way to much of the stuff........maybe my entire day's worth of cals..
