BLT Pasta Salad

Hey all! I converted this tonight for the first time. This pasta salad is killer! It's always been a big hit at cookouts. I thought it tasted great with my adjustments too. I'll post the original recipe, noting my adjustments. I halved the recipe also, although not always exactly. This is one you need to make personal adjustments for your own triggers with lettuce & tomato. I think it originally came from Parents Magazine. Enjoy!
BLT Pasta Salad
1 pkg small pasta (such as corkscrew, elbows, shells, etc.) cooked, then rinsed with cold water (1/2 box) 4 ripe plum tomatoes, halved, sliced (1 1/2 seeded & diced) 3 c. sliced Romaine (1 handful pre-cut bagged Romaine) 1 lb pkg thick cut bacon, cooked & crumbled (4 slices turkey bacon) 1/2 c. mayo (1/4 c. FF) 2 T. cider vinegar (1 T) 1 tsp sugar (1/2 tsp) 1/2 tsp salt (1/4 tsp) 1/4 tsp black pepper (few grinds of the pepper mill)
Mix pasta, bacon, lettuce, and tomato. Whisk remaining ingredients. Toss.
Serves 6.

We can have fat-free mayo, and turkey bacon in moderation. Now, if only I could eat lettuce....

Why cant you eat lettuce Amelia? I can handle it in small amounts and at the end of the meal.

I don't know . I can't have raw greens at all--no green salads or coleslaw for me. I can have cooked greens (like cooked spinach and cabbage), though. In fact, I can eat almost any green thing once it's cooked. Same for carrots. Go figure.

Hi; Where is the fibre in this salad, it is the pasta and could you have bread with it to make it more filling?

Yes, the pasta is the soluble fiber. When I altered this recipe, I cut back some on the lettuce & tomato just to reduce some of the insoluble. And, of course the turkey bacon was just a little, cause you can only have so much of that.
We usually either have it as a side at a cookout, or as a light dinner. Of course you could have bread with it. That would give you even more soluble fiber.

I find that either bacon or tomato is a big trigger for me regardless of when I eat it. Is this common for anyone else?

As long as I've had soluble fiber, I'm okay with a little turkey bacon and a little tomato. But then, I have problems with carrots, even cooked, no matter what else I've eaten and they're supposed to be safe.
