What's Your Favorite Recipe?

We've done polls like this before, I know, but there have been many new recipes posted since then.

What's your favorite IBS-safe recipe? If you were on Death Row, and your time was up, and they asked you what you wanted for your last meal, but it HAD to be IBS-safe, what would that meal be?

oh god bev.. nice scenario... Anyways my alll time favorite IBS safe meal would be boiled 5lb (haha) lobster with lemon, and a baked potato with fat free white zinfindel dressing on it.. or rice pilaf.

But if you're referring to a recipe from this website my favorite so far is the shrimp pasta. The one with peas and carrots in it. I think it is Kree's recipe. Its sooo yummy, but I leave out the cream cheese, and I've even used chicken instead of shrimp before.

Yep, it's me and five (!) boys. They're all sweethearts and I love them dearly, but GOD can they be messy. Cleaning doesn't happen except once in a blue moon - I gave up a while ago. Doesn't help that 3 of them are still students - one finalist and 2 PhDs.

One of them (not a student) is actually going to lodge with Si and I from July. We could do with the help with the mortgage. He's the only tidy one.

Honestly, I really hate eating and I have no imagination when it comes to cooking because it all seems like such a chore for me. Food has been a very negative thing for me with very negative results for many years. If I had to chose I would say grilled salmon, baked sweet potato with fresh hot bread, and of course something sweet, I do love my sweets.

My favorite recipes from the boards or Heather's book are the Zucchini Bread from Heather and Kree's Maple Craisin Scones (I use almond meal rather than chopped because it's easier for my tummy).

I never saw the shrimp pasta recipe until you mentioned it. Thanks for pointing it out. I'm going to have to try it.

We had shrimp scampi last night and it is a family favorite. We love it. I have passed it onto so many friends and they all love it. The lemon garlic chicken that Mags posted is good too. I love anything that is fast and easy to make. And then of course there is the vegan fudge. It is so easy to make and hello, it's chocolate .

Bev, talk about a tough question!!! I really had to think about it, but I have to say my baked macaroni and soy cheese... with the little bit of extra cheese, of course. It's just my ultimate comfort food.

So Bev, you never said... what's YOUR favorite?

Mmm... that does look fantastic. How did I miss it?? I'll have to try to make it sometime when my dad's not around since he can't have alcohol!

Do you think it would be okay without the mushrooms? I hate them and they hate me.

Sure, Kree. The recipe doesn't need the mushrooms for the taste. But you do need the booze (although the alcohol burns off anyway, leaving just the flavor). What's really nice about this recipe is the amazing flavor in the chicken; it just tears apart, it's so tender and MOIST. White meat can be really dry, but not in this dish! And the "No Yolk" noodles are a must.

Oh, BTW! If you omit the mushroom, add more booze or a little more canned tomato, because the noodles need the juice.

Enjoy!

Bev
