I'm making up for the BAD chicken/potato recipe...

Hi everybody - I want to apologize again for the chicken with potato crust not being too good. To make up for that, this one's great. I've had it many times and it always turns out good.
4 half chicken breasts, w/or w/o bones and skinned 1 bottle fruit chutney (or use one of Heather's recipes) 4 tsp Dijon mustard 1.5 tsp dried thyme
Sprinkle chicken breasts with s/p, onion powder and garlic powder.
Mix mustard, thyme and chutney together in small bowl. Spread all over top and bottom and sides of chicken breasts. Place chicken on rack over shallow pan and put in 375 oven for 30-40 minutes. Put enough water in pan so drippings will not burn.
These comes out tender and juicy. If you don't want to use chutney, you can use any kind of preserves (peach, apricot, quince, etc.) and they'll come out just as good. The chutney gives it a little kick, since most chutney's have jalapeno pepper--not much--in them.

Hi Sharon, I made it and it was really nice. My husband loved it too. When he got home from work and came in the door he even said "something smells great!"
It was really quick to prepare which is good. I used mango chutney from a jar.
Anyone who hasn't tried it should!

I made this recipe last night for dinner and it was wonderful. I used peach preserves because my husband claims that he does not like chutney. Even my two-year-old son liked it. I served it with baked potatoes and the cornbread from Heather's book. Thank you so much for the recipe it is nice to have some variety in my diet finally!

Ok, maybe I am just missing it, but where the heck in the stores do you find CHUTNEY? I have looked all around salad dressings, etc and can't seem to locate it! Any ideas?

Christianna - chutney should be with the jams and jellies, since it's sweet like jelly and usually made with fruits. But, be careful, some of it is HOT (spicy) because they put jalapenos in it. Just look down the ingredient list to see if it's near the bottom. But, usually, if it's mixed in with other ingredients, it becomes less kicky. You can also find it in specialty and gift stores in tourist areas. Everytime we go somewhere, I always look for it and sometimes find it in wine shops, too. I have quite a collection.

Sharon, Thank you! I must just be missing it! I have a pretty nice grocery here in Winchester that has lots of things that most stores don't have, so I am going to guess that they will have it. I will watch the ingredients; my husband will love it though! The spicier the better for him! Thanks again!

Mags - it makes sense because you use chutney with/on meats!!! But, then again, you have to realize that men probably are the ones who make decisions where to put stuff. I tried looking for honey one day in the grocery store and I looked all over with the sugars. I had to ask...guess where it was? With the peanut butter and jelly. Why, I asked?? Because people always make peanut butter and honey sandwiches. I just laughed because I never heard of a PB and honey sandwich!!! So, go figure!

I made it for dinner with Major Grey's Chutney (standard mango) and it was delicious. I've got a couple of jars of more exotic chutneys I can't wait to try now.
I made some chicken with mustard in the mix and some without and couldn't really tell a difference in taste.

OK, all of the above would be right in one of our local stores - they have chutney planted with the specialty cheeses, meats, crackers, dairy, and in with the asian foods, as well as in the italian and mexican foods sections (!?) which I find odd. Not only that, but a lot of it is mango, some of which is good, and some not so good, but I did find some made with tart cherries a long time ago that was really yummy. can't find it now, though.
