Gluten Free Corn Bread - Quick & Easy

Hey guys,
Just bit the bullet and joined our state coliac society. They've sent me loads of info and some great recipes. Below is their corn bread.
You need
190g (1 1/2 cups) cornmeal or polenta 100g (1/2 cup) gluten free flour mix* 1 tsp xanthan gum 2 tbls sugar (this I leave out as I don't like sweet) 3 tsps g/f baking powder 1/2 tsp salt (I only put in 1/4 tsp) 310 ml (1 1/4) cups soy or rice milk 60ml (1/4 cup) canola or olive oil 2 large egg whites
* G/F flour mix - combine 2 cups white rice flour, 1/2 cup potato flour and 1/2 cup arrowroot or tapioca flour. (Use as required)
Preheat oven to 220deg C (425deg F). Grease loaf pan
1. In a large mixing bowl stir together cornmeal, flour mix, xanthan gum, sugar, baking powder and salt.
2. Make a well in the centre and put in the milk, oil and egg or egg whites. Mix well, then beat vigorously for 30 seconds.
3. Pour into prepared pan. Bake for 25 to 30 mins or until the bread begins to pull away from the sides of the pan.
I've made it twice and its really nice, light and moist.

Hi Bev,
Any other great gluten free recipes would be greatly appreciated! Long story short, I am not a celiac, but trying to avoid wheat flour as much as possible. It really sets things off!
I have had a lot of trouble baking gluten-free. The bread doesn't rise properly and the cookies crumble. I realize that's the nature of rice flour, etc. but it's like learning to cook all over again. But I keep trying!
Have you read Bette Hagman's cookbooks yet? Those are great recipe sources, too.
