Brown sugar banana bread question...

Has anyone ever made only a half recipe of the brown sugar banana bread? I would make a whole recipe, but I only have 4 or 5 black bananas. I don't want to throw them out. And I'm thinking they black bananas will go bad waiting for the others to turn black!!!
Anyhow...I'm going to make a half batch!!! Any suggestions??? Thanks!

StephS, I've never made a half a loaf, but because I've been in the same situation with less than the required amount of bananas, I've just used brown bananas and they seem to work just fine for me. (I just mash them really well) As a matter of fact, I just made some last night and ground up some walnuts really fine and threw them in there too. It turned out super! Let us know how the half recipe comes out! KAL

I have made half batch (one loaf) often and turns out good....also, you can freeze banannas (I have done this too) and use them when you have enough. They are more mushy after thawing, but still good to use.

I make half (one loaf) everytime I make it - Ive never had it NOT turn out delicious! This is my favorite IBS safe recipe!

This is definitely my favourite IBS safe recipe too!
I always only make a half-recipe, because I only have one loaf pan on hand, and it's always turned out fantastic.
I don't always use black bananas - everytime just brown ones (or one fresh one with black ones etc.) have come out OK as long as you mash them very well (I usually just stick them with all the wet ingredients and the sugar into the blender for a few seconds).
I always cut bananas in half and freeze them for snacks (kind of like popsicles) - but i've never tried using them for the recipe. Now I will!
