Wow, torbetta, that recipe sounds really complicated! The way I make scalloped spuds might be a little easier -- try this and see what you think:
Use olive oil or safflower oil instead of the butter. Put it in a large glass baking pan with a teaspoon or so of minced garlic. Slice a layer of unpeeled potatoes into the pan, then sprinkle them generously with salt and pepper and cilantro and sprinkle them VERY generously with flour. Now add a layer of sliced onions; you should have about the same amount of onions as what you've got potatoes. (Optional: add a thin layer of grated cheese here if you want cheese, and add meat here if you want.) Repeat the layers of potato, salt, pepper, flour, and onion. Now pour the soy milk over the potatoes, till it comes halfway up the depth of the pan. Sprinkle the top with paprika and bake at 375 till bubbly and browned.

Kelly, that sounds like the way my aunt makes hers! I think she's even used chicken broth instead of the soy milk. I'm a little confused about where the oil comes in, though... do you mean that you put it into the pan before any potatoes go in, then just start layering then on top? And do you have any clue about how much you use? Just checking, because I might have to try it this way, too. Thanks for sharing!

Yes, Kree, the oil just goes in the baking dish (so the spuds don't stick); how much you use depends on the size of the pan and how well you like or tolerate oil. I'm pretty generous with it!
Chicken broth instead of soy milk sounds like a GREAT idea. I'm going to try that!

I should probably send you a private message instead, but I don't want to intrude more than I have to. I don't recognize you, but then again poor memory and not being on the board as often as I'd like means I don't always get to meet the new ppl or keep in touch with the veteran IBS members. I like your signature - the pic of the stages a baby goes through while growing in the womb. If you don't mind me asking, are you expecting? Congrats and good luck if you are. I have always been interested in the development of babies, it's a very imformative pic.
