Okay...I've been searching and searching and searching on this site but I can't seem to find a recipe for just plain old rice pudding. Nothing with orange, lemon, maple, etc. Just plain regular rice pudding.
Does anyone know a recipe??

No, Kimm, I don't. But I thought Heather's recipe for rice pudding was fabulous (Eating for IBS, p. 79). Did you try it? I substituted raisins for the bananas. Hubby LOVES rice pudding, but we haven't had any in years because of the fat -- until this recipe. We both love it!
I can't have nuts anymore (because of my diverticulosis), so next time I make it I'll cut out the nuts. My only complaint is that it doesn't seem to keep very well, turning hard and crusted when refrigerated -- so you need to serve it right away. Since it makes 6 servings, next time I make it I'll cut the ingredients in half and serve the 3 immediately, thus not having any leftovers to turn hard and crusty.
You could also try Will's recipe for rice pudding on the very next page (hmmm... any competition going on there, Heather?). I haven't tried it yet, but several people here have and liked it. If you don't like lemons, I'm sure you could just eliminate them; the recipe also calls for vanilla, and I would think you could increase the amount a little to make up for the lemon you've eliminated.

I can always count on you to help me out when I'm in a fix!!
I have Heather's recipe book...and I'm gonna give the recipes a try and just modify them like you suggested. Wish me luck!! (we all know what happened last time I tried to make RKT's!!) WAIT!! I didn't say RKT's...I meant....dog poop....yah...it was really nasty....you wouldn't have liked it
