It's not a plain pancake recipe, but it's a very, very good pancake recipe for everyday or special occasions. My ex-significant other and I could eat the whole batch. Now, if only I didn't miss bacon so much...any suggestions for a good substitute?
Gingerbread Pancakes
1 cup unbleached white flour 1 tablespoon sugar 1 teaspoon baking powder 1 teaspoon ground ginger 1/2 teaspoon salt 1/2 teaspoon baking soda 1/2 teaspoon cinnamon Dash ground cloves 2 tablespoons molasses 1 tablespoon vegetable oil 1 cup soured plain soy milk 2 egg whites, lightly beaten
In a large bowl, combine all the dry ingredients. In a small bowl, whisk the molasses, oil, soy milk and egg whites. Slowly pour the liquid mixture into the flour mixture and stir until uniform. Lightly grease a griddle or pan over medium-low heat and cook the pancakes for about 3 minutes on each side. Makes 6 medium pancakes. --adapted from http://hometown.aol.com/LynetteE/breakfast5.htm

Turkey bacon is made with both white and dark meat, so you need to be careful. It is low in fat and fries up super crispy and the pan isn't a mess to clean up! I think if you stick to just a slice or two, you could occasionally treat yourself. I like butterball brand. Look beside the regular bacon in your grocery store.

Thanks--I hadn't thought of that! I tried one tempeh-based vegetarian "bacon" and I liked the flavor but the texture was, well, tempeh...and my ex was NOT impressed .
