Help....I bought way too many bananas at the grocery this weekend. (Hey..they were $1 a bag!) But, I am a bit tired of banana bread. Any other suggestions?? Thanks!

just put them in the freezer until u need them skin and all they will keep. Then u can make a banana strawberry smoothie.

I second the smoothie idea -- plus you can put them in pancakes - maybe make a pudding with them (I am new to this recipe idea -- but I bet there is a safe recipe out there somewhere)-- include them in a small fruit salad (after a safe meal) -- put them in your morning cereal (even oatmeal)....

I third the smoothie idea, I LOVE banana smoothies. I have them almost every day. I just whirr them in the blender with some soy or rice milk, a little sugar unless they're rally ripe, and usually a tiny bit of either cinnamon or cocoa powder. Mmm!
Here's a thread about ideas for ripe bananas. Also, rlan's Banana Chocolate Chip Bars look fabulous.
I came across a pudding recipe the other day that had a banana variation, too. Here it is!
Tofu Pudding
Blend 1 pkg. tofu with 1/2 cup liquid honey, maple syrup or sugar, and 1/8 t. salt.
Variations
Chocolate: Add 1 t. vanilla and 1/3 c. cocoa Banana: Reduce sweetener to 1/3 c. and add 2 ripe bananas, mashed Carob: Add 2/3 c/ carob powder, 1 T. vanilla and 2 t. lemon juice Lemon: Add 6 T. lemon juice and 1/2 t. vanilla Strawberry: Add 1 T. lemon juice, 1 t. vanilla and 1 1/2c. strawberries
I haven't tried this, but it certainly sounds easy and tasty!
