Banana Chocolate Chip Bars

These are awesome. My husband said he could eat the whole batch! I just adapted the recipe from my "Best ever cookies" book. Enjoy and let me know what you think!!
2 cups all-purpose flour 2 tsp. baking powder 1/2 tsp. salt 3/4 cup apple sauce 2/3 cup granulated sugar (or about 1/2 of this see note) 2/3 cup packed brown sugar(or about 1/2 cup see note) 2 tsp. vanilla 1.5-2 ripe bananas (depending on size) 2 egg whites 1 cup non dairy chocolate chips ( I buy Tropical source at Whole Foods)
Beat apple sauce, sugars, and vanilla with mixer until creamy. Beat in bananas and egg until banana is all mashed. Beat in flour, baking powder, and salt. Stir in chocolate chips. Spread into greased 15x10 inch jelly-roll pan. Bake in preheated 350F oven for 15-25 min. (depending on oven, mine took 17 min.)until knife comes out clean. Cool pan on wire rack. Cut into bars.
Note: I used less sugar than called for my guess is about 1/2 the granulated sugar maybe a little more and about 1/2 cup brown sugar maybe a little more!! I def. don't think you need more, the bananas if really ripe give great flavor. Also I changed the vanilla from 1 tsp. to 2 so that makes a difference. I cooked mine in a deep metal pan b/c I don't have a jelly roll but you def. need something bigger than a 13x9 they rise a little. Enjoy!!

I made this over the weekend. It is absolutely wonderful! It has the consistency of a brownie. Very moist!! I definitely recommend!

Hi I just made these bars. They are pretty good. I should have baked a little longer. I baked in a glass 9x13 inch pan and it did rise a bit higher in the middle. so I didn't cook it long be cause the edges were to brown. Baked for 22 minutes. Next time longer. Maybe until top is browner. but they are tasty. I am sending most of them with my daughter to Univ.so I'm sure some one will eat them. PS. I wasn't sure about banana and choc. chips but not bad next time though maybe a little less on the chips.
