Hi everyone! I have been trying the diet lately, and I pretty much eat a banana for breakfast, and peanut butter and jelly for lunch, and pasta and pumkin cookies for dinner. I am totally lacking in fruits and vegetables. I'll have to add some soon.
I bought the Low-fat Bisquick and made drop biscuits with vanilla soy milk. they turned out SOOOOO good!!! I love biscuits. I eat about 3 a day.
I also made pumpkin cookies, which turned out very good, too! (I don't like all the sugar in the recipe (2 cups), but it doesn't have any fat at least)
Also, for dinner I make pasta. I just cook the pasta, and add low-fat italian dressing and low-fat blue cheese dressing. I know this sounds weird, but I thought I would give it a try. I also added a can of chicken one day, and yesterday I mixed 2 cans of tuna with the pasta. Suprisingly, it's really good!! Even my fiance liked it, and he's weird about "healthy" food sometimes.
I know I shouldn't add the blue cheese dressing because it does have milk in it, but oh well....

You're doing real well (except for that salad dressing -- if it has milk in it, lose it). There are lots of good recipes in here that are IBS-safe (of course) and absolutely delicious -- check out the index (you'll see a link to it above). Pasta is SOOO good, and there are so many good recipes with ideas for what to put on the pasta (I'm partial to my almost-fat-free pesto).

I love Bisquick too; it's great stuff. I've used it for years. As a matter of fact, I think I'll fix waffles for breakfast this morning...

If you're stable, you can start adding in veggies in soups. Just heat up some stock (I use home made that I keep in the freezer, but there's store-bought stuff as well) and throw in your favorite veggies (cut-up very well, of course). Serve it with some sourdough bread (I like it stale so I can dunk it in my soup). You can whip up an incredible smoothie using fresh fruit -- check out Heather's recipe for banana berry smoothies. YUM!

I guarantee your hubby will learn to LOVE healthy food when you start using some of the recipes in here -- and in Heather's books (I assume you have them?)

Thanks! I actually have printed out a lot of recipes from the recipe board. That's where I got my pumpkin cookie recipe. I'm definitely going to try more.
That smoothie sounds really good!
Yeah, about the Bisquick....I actually did a search on the boards for all things Bisquick-related. I noticed you mentioning it a few times and saying how you have and continue to use it, so that made me feel that it was safe. I think the low-fat kind tastes so good! I have never tried the regular kind, so I guess I don't know what I'm missing and have nothing to compare it to!

Gemini, if you want to more veggies you could also try throwing some in with your pasta! I love sauteing sliced zucchini and then adding it to my spaghetti... which I make with tomato sauce, but I'm sure the zucchini would taste great with low fat Italian dressing, too. That's my favorite, but I'm sure lots of other veggies would work too. Plus, Bev is right, there are lots of pasta recipes on the exchange I've been meaning to try. Mmm.

I agree with Bev, you have to lose the blue cheese dressing! Dairy is very bad, and take my word for it, once you find a good substitute you won't even miss it!

Yeah, I just bought some frozen peas to add to my pasta. I needed SOMETHING else to add to the pasta, otherwise it can be boring. The only bad thing I hate about making pasta or rice or breads, is that I tend to eat ALOT of it at once. I can't help myself!! I love pasta and bread and rice SO MUCH!! For instance, if I were to make banana bread (which I LOVE), I just know it wouldn't last for maybe only a day or two! This is not good for me to do!
I know some people say to divide it into portions, and I have tried this, but I just end up eating the other portions, too. This is definitely a problem for me.
By the way, I tossed the blue cheese dressing. I now officially have NO DAIRY in my home! I used to drink a gallon of skim milk with my cereal in as little as 4 days! That's a lot of milk! And I also would eat a yogurt everyday.
I don't think I'm going to miss dairy all that much because I hardly ever eat icecream, I never ate cheese. But I do love milk. I got vanilla soy milk to cook with. It tastes really good. I've used it to make pancakes, biscuits, cookies, etc.
The only problem is that at my grocery store, there is absolutely NO SOY ANYTHING, except milk. So I have NO options for a cheese substitute. there used to be a health food store called WILD OATS, but it's gone. I don't know what to do. I really wanted to make a mac-n-cheese recipe!
