Cantonese Jok (Rice Porridge Soup)?

I am very eager to try this, but i have a couple of questions.
first of all, how come you have to use canola/peanut oil?It's only 1/4 tsp, and i wonder why we have to use it all.
my other question is why do you have to leave it out over night? Please bare with me, im so new at cooking. thanks

My guess is to keep the rice from getting too sticky. Different types of oils have different flavours. Ie. Peanut oil and sesame oil are often used specifically for that. If you can, use what it asks for. Otherwise, substitute.
