Yummy sauce to put over rice noodles

Yes, that's it's name. I just named it. I made up the recipe, so I can name it whatever I want, right!?
OK, I love rice noodles and always have some in the fridge so I can insta-snack without much thought. Sometimes I cut up veggies and toss them in, too. Sometimes I don't. But I always use a version of this sauce, 'cause it's yummlicious.
This sauce is a meld of several others I've seen all kinds of places. I'm one of those intuitive chefs, so I just sorta try stuff, and it's never the same more than once. My apologies if this is similar to anything anyone else has posted.... Anyway, here's the basic recipe:
1/2 cup brown sugar (lite or dark, doesn't matter) 1/4 rice wine vinegar 2 tsps canola oil juice of one lime 3 Tbsp honey 3 Tbsp dijon mustard fresh garlic, minced, to taste (omit if garlic gives you problems. sometimes I just skip it myself 'cause i'm lazy!) Spring onions, to taste (again, omit if desired) salt and pepper, to taste
Whisk ingredients Heat on stove top at medium heat Pour over noodles, stir well
(NOTE: If you're using the kind of rice noodles that you heat up, then you don't have to heat the sauce. Just toss it onto the hot noodles after you've drained them)

Ummm... I'm trying to phrase this so it doesn't sound smart-alecky....! They're noodles made from rice. There! It sounded bad anyway... SORRY!
I don't know brand names, 'cause I get them in the Asian markets and the labels are written in Chinese, etc....

I tweaked it since I didn't have everything at home, but I just had a very yummy dinner of rice noodles with your sauce (and an ADB for dessert!). I didn't have any rice wine vinegar or lime, so I used extra honey, lemon juice, and little water...sooo good, thanks, JenX!

Glad you liked it. It's so easy, isn't it!? I tweak it all the time.... I use whatever is handy. But that's the main gist of the thing...

I tried this too. What a versatile sauce. I used it for the noodles and also as a marinade for chicken breasts. Yum! What else do you do with rice noodles? Joan
